Berry Smoothie

Ingredients:
- 5 Cups Frozen Mixed Berries
- 2 Cups Strawberries
- 1 ½ Cups Milk
- 2 Tbsp Honey
- ½ cup Granola

Steps:
1. Blend Frozen fruits, honey and milk until thick consistency.
2. Top with granola, dried coconut chips, chia seeds, nut butter* or fresh fruits.
3. Enjoy!

Pasta Salad

Ingredients:
- 12 oz Pasta
- 5 Tbsp Olive Oil
- ½ cup Cherry Tomatoes
- 4 cups Spring mix salad
- ½ cup Feta cheese
- 1 cup Cucumbers
- ¼ cup Black Olives
- 1 ½ cup low fat Italian Dressing

Steps:
1. Boil pasta and toss with olive oil.
2. Chop cucumbers into cubes and slice cherry tomatoes in half.
3. Toss together ingredients in a bowl.
4. Enjoy!

Teddy Bear Juice

Ingredients:
- ½ cup apple juice
- ½ cup water (hot during colder months)
- 1 teaspoon lemon juice
- 1 teaspoon honey
- ¼ cup ice

Steps:
1. Mix the ingredients together
2. Enjoy!

Hummus Sandwich

Ingredients:
- 2 slices whole-grain bread
- 3 tablespoons hummus
- ¼ avocado, mashed
- ½ cup mixed salad greens
- ¼ cup sliced cucumber
- ¼ cup shredded carrot

Steps:
1. Spread hummus onto both pieces of bread
2. Fill the sandwich with greens, bell pepper, cucumber and carrot.
3. Slice in half, serve and enjoy!

White Bean Dip

Ingredients:
- 1 ½ cups cooked cannellini beans
- 2 tbsp extra-virgin olive oil
- 2 tbsp fresh lemon juice
- ½ tsp lemon zest
- 1 small garlic clove
- ½ tsp sea salt
- 2 to 4 tbsp water
- freshly ground black pepper

Steps:
1. Blend cannellini beans, olive oil, lemon juice and zest, garlic, salt, and pepper until combined
2. Slowly add water and blend until smooth
3. Serve with veggies or whole grain Crackers
4. Enjoy!

Sweet Coconut Dip

Ingredients:
- 1 cup Coconut yogurt
- 2 tbsp Lime juice
- 1 tbsp Coconut sugar
- 2 tsp Tajin

Steps:
1. Mix ingredients in a bowl (You can add more sugar and tajin to taste)
2. Serve with watermelon or your favorite fruits
3. Enjoy!

Fruity Punch Juice

Ingredients:
- Orange Juice
- Cranberry Juice
- Apple Juice
- Grape Juice
(Please make sure juices are sugar free in order to maintain health benefits)

Steps:
1. Add a few ice cubes into your cup.
2. Add the juices according to your taste and stir.
3. Enjoy!

Taco Bar

Ingredients:
- Soft or Hard Tortillas
- Black Beans
- Shredded Lettuce
- Sliced Avocados
- Corn
- Pico-de-gallo
- Low-fat/Vegan Cheese
- Lite/Fat-free Sour Cream
- Taco seasoning

Steps:
1. Drain and mash the beans and add taco seasoning to taste.
2. Arrange all of the toppings into bowls.
3. Serve with warm tortillas.
4. Guests can pick their toppings and make their own tacos.

Parfait Cups

Ingredients:
- Low Fat Vanilla Greek Yogurt
- Diced Fresh Strawberries
- Fresh Blueberries
- Granola
- Coconut Chips
- Coconut Whipped Cream

Steps:
1. Layer the yogurt, berries, and granola in a cup or jar.
2. Top with granola, coconut chips and coconut whipped cream.
3. Enjoy!
